We all have our family and cultural traditions and often it centers around food. In other words, what’s a good life without good food? When man evolved I don’t think inflammation caused by food he ate was his main concern. I think starving or not was.
But now for the most part, starvation is not a problem here in the US. Compared to how we used to eat a short two hundred years or so ago, the food we favor now must be almost unrecognizable to that eaten then. For example, snack and junk food made with abundant oil, refined white sugar and salt and soft drinks that are nearly all high fructose corn syrup.
An autoimmune disease is when the body produces antibodies that attack itself. No organ is safe, not even our brains or hearts. The most common attack is what seems to bother me. It’s called inflammatory arthritis or more properly called rheumatoid arthritis. It goes to work in my fingers, joints, muscles, knees and feet. It alternates between all these where it strikes. It always pops its ugly head up when I eat wrong foods that trigger it.

- Crohn’s disease
- Diabetes type 1
- Rheumatoid arthritis
- Multiple sclerosis
- Nonspecific inflammatory arthritis
- Ulcerative colitis
I know that medication may do one good thing, but cause a host of other symptoms. So, I never do that. Although, I am not quick to use it, I only use Advil® when I can’t stand the pain anymore. When I slip and eat something wrong, I know what’s coming around the corner for me later.

I think most people don’t think diet has anything to do with their health. I have found there is no cure except to radically change my diet. Being vegetarian or vegan isn’t enough. Better food choices have to be made.
For example, I try to eat a plant based whole food diet. This means I avoid refined starches like bread and don’t use vegetable oils. Most vegetarians and vegans don’t avoid these and wonder why they still aren’t healthy and feel lousy all the time.
You may not know what food is causing you the problem. So, you might have to contact your doctor and go through an elimination diet to pinpoint the problem food(s).
In other words, you might have to try a diet without soy and wheat. This also means barley and rye if you wanted to go gluten free. But, be mindful other grains have their own type of gluten, too. For example, you might be bothered by corn. Rice is usually a neutral choice not causing any problems.
Once you stop eating the culprit foods, it may take weeks, even months for the inflammation to finally go away. But, unfortunately, even if you eat small amounts of these bad foods again, you could have a painful flare up.
You may be taking medication already and you might want to get off it because of complications it causes. But, you have to work with your doctor as you improve your diet to reduce or eliminate medication.
You wouldn’t want to come off it too soon, because pain might increase too much. Medications don’t cure, they only relieve symptoms. If you’ve run out of options, changing your diet to plant based whole food may be your health giving, even life saving solution. That’s how I eat and it has helped me lose weight, feel better and hopefully live longer like many seventh day Adventists.
