I used to eat eggs, but after a while when I tried them again, they didn’t taste right. For me, the same goes for meat. All the animal products have the bad cholesterol. I don’t ever want to have a heart attack! I can’t believe I’m still alive from all the fat laden cholesterol filled unhealthy foods I ‘used to’ eat!
From my own experience, after you adopt a plant-based whole food diet for some time foods you ‘used to eat’ will simply not taste as good. I still endure ’bouts’ of inflammation when I ‘fall off the wagon’ eating unhealthy foods on special occasions, birthdays and holidays.

You will understand this once you’ve been vegetarian after a while. Your taste buds will definitely change, although from time to time you too will get cravings for snack and junk foods like chips, cookies, crackers and the like. It will take some time, but you will also learn from your own trial and error what to eat and not.
Ingredients for ‘Egg-less’ Scramble with Onions and Mushrooms Recipe…
- I buy the extra firm tofu, but any would be OK. To me, tofu has an ‘egg-like’ consistency. Tofu takes on the flavor of your spices
- Chopped onion
- Sliced mushrooms
- Dash of garlic powder
- A little paprika
- Shake of pepper
- Hot sauce of your choice
- Fry potatoes in another pan
How I cook it…
- I dice the tofu up into small cubes (approximately 1/2 cup)
- Chop the onion and mushrooms (about 1/4 cup each)
- Add your spices
- Cook for five to ten minutes until done
Although, I no longer do eggs, I also limit tofu. Yet, I do eat tofu as a substitute for foods high in saturated fat, trans fat, cholesterol and sodium. I think eating a small amount during the week is OK. Yes, I would substitute tofu for eggs any day, but I eat a very low-fat diet and no refined carbohydrate foods. There are cardiovascular benefits from doing so.
