Should We Eat More Potatoes Or Less?

I cut my potato consumption down because I felt I might be sensitive to ‘solanine’. But, I still do eat potatoes. I just don’t eat french fries, potato chips or baked potatoes anymore. Why, you ask?

Acrylamide and ‘Maillard reaction’ are created when baking or frying at high temperatures. Try to microwave or boil your potatoes, not bake or fry with or without oil. Despite all this, they remain active members of the nightshade variety of which are all known to cause inflammation in those susceptible

When I eat my daily fried (no oil) potatoes in the morning, I add beans and sprouted tofu to it. I use a couple medium sized potatoes I chop up and brown them. When done, I add half a cup of beans and a thin slice or two of sprouted tofu turn off the heat and let it set a few minutes to heat them up. This fills me up until 3 or 4 PM, just in time for dinner.

Potatoes contain a lot of vitamin C, most B vitamins, potassium and other minerals. The biggest problem I see with potatoes is man made. It’s what people put on top of them. Therefore, forgo the delicious high-fat gravy, bacon bits, cheese, sour cream and butter or margarine. This is all bad cholesterol for the heart and fat you will wear.

Instead, choose topping your tasty potato with chives, salsa, make your own low-fat tofu sour cream, buy low-fat soy cheeses, use low-fat salad dressings, even pour soup over them. And, don’t forget the salt and pepper! Remember, people in cultures around the world who eat plant based whole food, stay trim, healthy and live longer!
