This is a quick dinner idea. One day I was working on the yard and realized I was getting famished. Some nights you just don’t want to do a lot of preparation for dinner.
I needed some food in me pronto, so I opened up a handy bag of coleslaw and heated two corn tortillas with beans.
Coleslaw With Soft Bean Tacos Recipe
- Heat 2 ‘Food for life’ sprouted corn tortillas with beans on top open faced 30 sec. to a minute
- Cover with another paper plate so beans don’t pop all over your micro
- Fold shells after adding salsa (be careful, hot!)
- Add tahini dressing on top of coleslaw in bowl and toss
- Dice up apple chunks to mix in
I put salsa on as I ate them so the soft tortillas wouldn’t tear as they so often do when wet with the condiment. On my coleslaw I added tahini dressing I have made up in a plastic container ready to go. You can eat these at lunch as well as for dinner.
I’m not going to go into the particulars of nutrition here, but cabbage is very nutritious. It’s in the same family as broccoli. When you add the beans and sprouted corn tortillas I believe you have a balanced meal in you.
Also, you don’t have to worry about the calories you are taking in. This is a filling meal that will keep you going for hours. Personally, since I am eating plenty of salad and mostly other plant based whole food, I don’t worry about my weight, health and longevity.
This is about the healthiest one can eat, as far as I’m concerned. It’s the way to go. I hope you join me as a fellow vegetarian bringing no harm to animals and our environment. It seems that the more plant based whole food I eat the more compassionate I am toward animals and the less I’m tempted to eat any meat.
