I have a few recipes using tahini as a salad dressing. It’s made out of sesame seeds, and I believe it’s a favorite ingredient in middle eastern food dishes. I know it’s an ingredient added it to hummus.
Yes, it’s very oily, but it has that pungent taste you just might love. At least, give it a try. I also use balsamic vinegar that you can buy almost anywhere. You don’t have to get any special brand of balsamic, but I only found the bottle of tahini at Sprouts® market. I get it with no salt and no garlic.
‘Literature data on the nutritional value of sesame seeds (Sesamum indicum L.), their use in feeding the world population and food production are presented. Sesame seeds contain up to 55% oil and 20% protein. Sesame proteins are limited by lysine but rich in tryptophan and methionine. Sesame oil is rich in linoleic and oleic acids, the predominance of gamma-tocopherol over the other isomers of vitamin E and high content of fat-soluble lignans (sesamin and sesamolin). Thanks to recent sesame oil has a phytoestrogen activity; it has a cholesterol-lowering effect [1 ncbi.nlm.nih.gov/pubmed/21842753]’.
I tried buying a can of tahini at my local store, but it wasn’t very good at all. So, anyway, lately I was thinking of a way to make the dressing easier. Now, what I do is simply drizzle a tablespoon of it over my salad and then shake a sprinkle of the balsamic vinegar on top and toss with the same spoon and the fork. It works out fine.
If you have any doubts about added oil in your diet, I say that we really don’t need any. In the back of my mind, I still am considering not using tahini because of the oil. But, it adds that extra great taste to your daily green salads. And, if adding tahini makes the difference between eating one or two large salads a day or not, I say use the tahini. But, don’t overdo a good thing!
