No Hassle Homemade Minestrone Vegetable Bean Soup Without Pasta

As I learn what is best for me to eat and not, I adjust my menu items. I love soup and always have, it’s just that certain soups have ingredients that aren’t too healthy to consume.

For example, I ate a can of minestrone soup the other day I bought from the store and negligently didn’t read all the ingredients before I put it in my shopping cart. Mistake.

My foot began feeling inflamed soon after I finished my bowl. So, I decided to read the main ingredients and again, make it myself without all the bad stuff.

Making soup is essentially a no brainer. It is very forgiving and hard to mess it up. You can also add about anything you’d like to add as vegetables.

I decided recently to not eat rice, potatoes or bread, anymore. Why? I gave these enough of a chance through the years discovering that all 3 don’t agree with me. I’ve learned starch doesn’t give me energy. It seems as though it robs it.

I feel more energetic and stronger without all grain and potatoes even though billions of people eat these regularly. I also don’t eat yams or sweet potatoes. I never liked the way they tasted, although I may experiment with eating them eventually. But, I didn’t give up my beans!

Beans make me feel OK, even though they are starchy. I should know, I’ve given all my food choices many chances over and over again so that I’m sure as I can be without a speck of doubt about what I can eat and not.

After all, I have to be sure or there will be nothing enough for me to eat. I don’t like starving! Here’s what I came up with today, and it’s simply delicious!

Ingredients to making my No Hassle Homemade Minestrone Vegetable Bean Soup without Pasta…

  •  1/2 a can of organic tomato sauce
  •  1 can of stewed organic tomatoes
  •  1/2 a can of garbanzo beans
  •  1 can of beans of your choice. I use white beans
  •  1 small can of peas with carrots
  •  1/2 can of green beans
  •  Handful of spinach
  •  And, Kale chopped finely
  •  1/2 cup of chopped yellow onion
  •  Add a diced zucchini
  •  Although I don’t, you can add pasta, rice or potatoes
  •  You can also buy all fresh veggies instead of canned and chop them up
  •  About a tablespoon of garlic powder
  •  A teaspoon of parsley
  •  1 to 2 teaspoons of Italian seasoning
  •  Shake of paprika
  •  A bit of turmeric
  •  Long shake of black pepper
  •  Cover ingredients with water
  •  Bring to boil
  •  Turn down to simmer for about 40 minutes until tender
  •  I like to tamp it down in the pot with a mash potato tamper to make ingredients smaller because it seems to make the mixture more flavorful as a whole
  • This soup is very tasty!
