I have suffered from mysterious aches and pains through the years and wondered why. To this date, it seems to be somewhat ongoing, depending upon what I eat. I am narrowing some of the supposed culprits down, but there still remains something which obscures itself.

My self-experiment continues. Yet, I believe I am getting very close to a solution I will be able to live with. And, hopefully, my remedy may apply to others who suffer from similar symptoms…

I believe my inflammation is rheumatoid arthritis despite not eating what I have learned causes it.

‘I don’t eat all plant based whole foods because I have found some of them harmful, despite hearing from the media they are ‘good’ for me. For example, I don’t eat grains like wheat, barley, rye and corn, except for white rice.  But, I am considering not eating rice because of the arsenic. Is even a tiny amount of arsenic good for you? Nonetheless, there are the holidays and birthdays, etc.. A tip is, if people around you drink, just have one drink. Then, have sparkling water in your glass you carry around. Then, no one will suspect you are a ‘teetotaler’.

What do I eat?

  •  Most pressure cooked vegetables are OK
  •  Pressure cooking reduces lectins in nightshade vegetables like peppers and tomatoes, potatoes, also rice and beans
  •  Green salads with balsamic vinegar
  •  Most fruits except for most citrus, except I do use lemon
  •  I avoid peanuts (especially peanut butter) and cashews, as they are both high in lectins
  •  I don’t eat processed and refined food
  •  I cook all my meals from scratch (It’s pretty simple, and not that hard to do)

Known Inflammation Triggers

  • Alcohol made with grains like beer and whiskey
  • Aspartame
  • Apples
  • Bananas
  • Chocolate
  • Citrus Fruits
  • Coffee
  • Cola
  • Corn
  • Dairy
  • Eggs
  • Meat
  • Nitrites in hot dogs and lunch meats
  • Monosodium glutamate
  • Nuts, Peanuts, Cashews
  • Olives, especially green
  • Onions
  • Potatoes
  • Red wine
  • Sauerkraut
  • Sugar
  • Tea
  • Tomatoes
  • Wheat, oats, barley, rye

Most of us eat so many things in combination it may be impossible to isolate which food is actually causing our discomfort. That’s why you might want to undergo an elimination diet supervised by your doctor.

‘Milk, egg, and peanut account for the vast majority of IgE-mediated reactions in young children, whereas peanut, tree nuts, and seafood (fish and crustacean shellfish) account for the vast majority of IgE-mediated reactions in teenagers and adults. The symptoms of an IgE-mediated food allergy almost always occur immediately after eating the food. However, an allergic reaction may not occur after exposure if a very small amount of the food is eaten or if the food, such as milk or egg, is extensively heated on the stovetop or baked in the oven [1 niaid.nih.gov/sites/default/files/faguidelinespatient.pdf]’.

I never underwent tests for allergic reaction to certain foods, so you could call me my own ‘test rat’. Although, everyone is not sensitive to the same foods, lectins may eat tiny holes in the gut in those susceptible, creating a gateway to his bloodstream that will permit foreign substances which shouldn’t be there causing an autoimmune disease.

In other words, you may be suffering from aches and pains and not know why. It could very well be the food you are eating. And, once you know the culprit food and stop eating it, all your suffering may simply disappear. It may be as easy as healing your gut by eating ‘certain’ plant based whole food while avoiding ‘all’ animal based products.
