Easy vegetarian recipes for ‘ex-meat lovers’

Most all vegetarian meals are fairly easy vegetarian recipes. For example, beans, rice, greens, potatoes and broccoli are simple to prepare. You can’t get any easier than that! I buy ten pound bags of pinto beans from Costco™ that don’t need to be rinsed, so it makes a great sauce when you keep adding water as needed. I bake my potatoes for about an hour, and steam broccoli for about five or ten minutes and squeeze lemon on it. It makes a great meal for lunch or dinner.

What’s fantastic about this way of eating is that you not only lose weight and keep it off, you start feeling better, have more energy and will likely live a lot longer. You won’t have to worry about heart disease, cancers and diabetes eating simple. It’s how the healthiest and longest lived people in the world basically eat. Let’s copy them.

Your diet is naturally very low fat, salt and sugar. Matter of fact, everything is in all the right proportions, nutritionally. You get all your vitamins, minerals, carbs, fats and proteins in all the correct amounts. It’s a winner for health and longevity. You will soon see that eating simple is the way to go. You get used to it, even looking forward to your meals. It’s a food lover’s diet.

Here’s what I eat daily

  • Breakfast: An assortment of fruit like blue berries, blackberries, raspberries and oranges. I buy berries when on sale. If not, I stick to bananas and oranges, etc.
  • 1 fried potato (not in oil)
  • Lunch: I eat a large green salad, beans and potato
  • Dinner: I eat beans, potato and steamed broccoli
  • For snacks: Fruit

Sometimes, we bring home rice bowls from Waba™ broiler or bowl. I forget the exact name. I just know where to drive to get it. I don’t know if you have one of these by you, but I am sure any rice bowl will do.

They add vegetables like cabbage, broccoli and carrots. They put dark meat in it. I don’t eat chicken. But, dark meat is cheaper and tastier than white meat. I get it without meat.

It’s nice once in a while not cooking and having others prepare your meals for you. It’s relatively cheap compared to other sit in restaurants. It is though much cheaper to do your own cooking, and healthier depending upon what things you cook. Other than picking up an occasional rice bowl, we don’t eat out.
