The ‘skinny’ on the so called Gluten Free Diet

What is a gluten free diet? One evening my chest hurt from eating wheat granola and wheat English muffins. I woke up in the middle of the night and had to step outside and breathe fresh air. I felt like I was asphyxiated. I was experiencing a sense of impending doom.

I didn’t go to the emergency or anything like that, but I felt I was in need of carrying a little green oxygen bottle around as I walked outside. It was really scary feeling like I was going to die from not being able to catch my breath. It was like I was drowning. And, I knew I was not having a heart attack.

I thought I was suffering from Anaphylaxis, which requires shots of Adrenaline. This is a severe allergic reaction. I had more than a few of the symptoms like a hoarse voice, Hives, tightness of my throat, and trouble breathing. The muscles of my chest hurt. But, fortunately for me, the effects wore off within a couple hours. I felt like I was going to die! Terrible!

I knew I had to finally swear off wheat and most other grains except brown rice and potatoes. I went through all my cupboards and started tossing things into the trash the next morning.

You have to read the labels

You have to read labels because there’s wheat (and/or other grains like corn, etc.) in almost everything that’s processed or refined. It seems everything we like and enjoy is made of wheat or has wheat products in it.

Did you know wheat is very addicting? It affects the receptors in the 
brain just like Opiates! Furthermore, today's wheat has a lot more 
gluten in it than the wheat in the biblical times of the past.

Gluten is a general term that names the protein present in wheat, barley, oats, and rye.

  • Avenin in Oats
  • Gliadin in Wheat
  • Hordein in Barley
  • Secalin in Rye
Glutens are also is in corn, buckwheat, millet, and rice.
The main emphasis on this site is to not eat processed or refined
food. This will eliminate forms of grain and other ingredients 
responsible for causing many health related problems

Gliadin is a toxic molecule within Gluten. Gliadin can produce an inflammatory reaction in the small intestines which may cause leaky gut syndrome in some of us.

  • Wheat, barley, oats, rye, kamut, spelt, teff, and couscous have Gliadin
  • Corn, Buckwheat, Millet, Rce, Quinoa, and Amaranth do not have Gliadin
  • But! All of these have Gluten, but not necessarily Gliadin  

This means if you have sensitivity to the Gliadin (which comes from certain Glutens) you might as well mark these off your diet right away…

  • Bagels 
  • Bread
  • Cereal

But, don’t get discouraged thinking there is nothing left to eat. There are various substitutes made out of rice, yams and corn like rice and corn based noodles and rice bread.

Gluten can be in meat, too, because Cows eat the grain.
So, if you just have to eat meat, buy grass fed. But, meat
(or any animal products) is not good for you...

Therefore make sure you make a habit of reading all the labels, because some manufacturers say their products are Gluten free, but are not. You have to educate yourself to know which grains the potentially toxic Gliadin is in.

  • You can eat grass fed meat (although I wouldn’t advise it) vegetable or fruit
  • When the substance hits the intestinal track the body’s immune system reacts with Antigens to protect the body from absorbing the toxin
  • Statistics show that about half of the US populace has reactions by the immune system to various proteins in the diet
  • There are many symptoms which include abdominal and bowl complications, cancer, fatigue, malnutrition, and osteoporosis
  • Sensitivity to gluten has been associated with other health disorders such as asthma, arthritis, diabetes, disease of the liver, and more
  • Gliadin seems to cause the small intestines not to absorb nutrition,leading to malnutrition, and osteoporosis
  • Leaky Gut Syndrome is a condition whereby your small intestine loses mucous lining, which is what protects us there from dangerous bacterial organisms. With the mucous compromised, what shouldn’t cross over into our blood stream can enter. This can poison our system, and effectively wreak havoc throughout our bodies
  • It can be beneficial to introduce a probiotic into your digestive system like eating yogurt

Some symptoms of Gluten sensitivity are…

  • Abdominal pains
  • Bloating
  • Diarrhea
  • Gas
  • Weight loss

You can be Tested for Sensitivity to Gliadin

You may want to get tested for sensitivity to Gliadin 
(The test is usually named Gluten sensitivity and not Gliadin sensitivity. 
If you aren't feeling any better on a gluten free diet you might want to 
get tested for sensitivity to other grains like Corn and Rice, etc.)

Gluten intolerance actually refers to one who is sensitive to Gliadin. Gliadin is a molecule within wheat and other grains that causes inflammation in the small intestines of the Gliadin sensitive individual.

How much Gluten is safe to eat? If you are sensitive to it, you have to be careful when reading labels. Some companies say Gluten Free, when the culprit called Gliadin is still present within the food. You have to educate yourself to know which grains it’s in and isn’t.
