Twice Baked Potatoes

I love twice baked potatoes! You can actually lose weight eating them. I like potatoes anyway you make them. This includes my French fries you might also enjoy. These twice baked are super easy to make. It’s almost like making a meal in a crockpot. It’s a low effort entre.

You don’t need to initially bake the potatoes in your oven, either. You can use your microwave. It will do the cooking job just fine and save time. You won’t be able to tell the difference in taste between oven and micro. After you cut them in half (after microwaving them until done) you fill each half up with your mashed up potato, then bake in the oven.

My Twice Baked Potatoes Recipe

  • Preheat oven to 425°F
  • Wash and then stab two potatoes with fork or knife in about four or five places, first
  • Wrap both potatoes with a paper towel to keep them from drying out too much
  • Cook separately in the Microwave oven for about 2 minutes on each side (It takes a little longer to do them individually, but it’s the easiest way to make sure each potato is cooked long enough)
  • Use a pot holder to take them out, also when you cut them, because they are hot!
  • Or, let cool down for a while first before you begin
  • Cut each potato in half
  • Scoop out contents with spoon
  • Add finely chopped up Onion  or Scallion (I use a regular Onion, they taste fine)
  • Garlic powder
  • Pepper
  • Parsley
  • Add a little water to make it like mashed potato consistency
  • Mix and mash up in a separate bowl
  • Add Broccoli or any other cooked vegetable
  • Spoon contents into each half of the potato equally and round the top of it
  • Sprinkle Paprika on each
  • Bake at 425°F for at least 15 to 20 minutes or until the tops are browned
  • Add a little Salt to taste

These twice baked potatoes are tasty and filling. I like these with Broccoli in them. You cut the Broccoli up in small pieces after you cook it. Then, you gently mix it in with the other ingredients before you spoon it all into the potato halves.

I never thought too much about twice baked potatoes until I made them for myself. I thought potatoes were fine cooked just once! It’s a worthwhile recipe, if you happen to be a potato lover. And, it’s hard to mess these up if you don’t happen to be very handy around the kitchen. Mashed, baked, French fried… It’s all good when it’s potato!
